Easy weeknight dinners: Florida red snapper

There are six weeks left to enjoy wild (Florida) Red Snapper before the end of the season. Below is a simple, healthy way to prepare this nutritious fish.

The Red Snapper you’ll find right now at the market is most likely from the Gulf of Mexico. It is a white fish with a mild flavor and a beautiful red color (which comes from its shrimp diet). You can purchase good quality Red Snapper from the following sources; Wild Edibles (several locations in Brooklyn and Manhattan, or online), Citarella (West Village, NYC), and Fish Tales (Brooklyn, or online).

For an Easy weeknight dinner, purchase one fillet of Red Snapper per person (about 5 oz each). Heat a BBQ or a broiler. Season the fish with kosher salt, freshly ground black pepper, and a little pinch of cayenne pepper on each side.

Make a quick salsa while your snapper marinates; (Serves 2-3 people); Finely chop 2 vine-ripened tomatoes, one ripe mango, 1 ripe avocado, and 1 shallot and combine in a glass bowl. Add the juice of 1 lime, 1 Tbsp minced cilantro, and a generous pinch of salt and pepper. Mix well and set aside.

Make a little baking dish out of aluminum foil and put your snapper in it. Drizzle the top of the fish with olive oil. Broil or BBQ the fish for about 6 minutes per side, or until opaque and cooked through.

Top fish with the fresh salsa and serve with rice, couscous, or salad.
